Ingredients
  

  • 4 medium zucchinis
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves
  • Salt and pepper to taste

Instructions
 

  • Using a spiralizer or vegetable peeler, create noodles from the zucchinis. Set aside.
  • In a blender or food processor, combine basil leaves, pine nuts, Parmesan, garlic, and olive oil. Blend until smooth. Season with salt and pepper to taste.
  • Heat a large skillet over medium heat. Add the zoodles and sauté for 3–5 minutes until slightly softened but still firm.
  • Remove the skillet from heat and stir in the pesto until the zoodles are well coated.
  • Plate the zoodles and garnish with extra Parmesan if desired. Enjoy your healthy, low-calorie meal!
