Ingredients
  

  • 1 whole chicken cut into pieces
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 1 cup barley
  • 6 cups chicken broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the chicken pieces and brown on all sides for 5–7 minutes. Remove chicken from the pot and set aside.
  • Add the onion, carrots, and celery to the pot and sauté for 5 minutes until softened.
  • Return the chicken to the pot, and add the barley, chicken broth, and bay leaves. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the chicken is cooked through and the barley is tender.
  • Remove the chicken from the pot and shred the meat, discarding the bones. Return the shredded chicken to the soup.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh thyme.

Notes

- For extra flavor, you can add a splash of lemon juice or a pinch of chili flakes.
- This soup is excellent for batch cooking, and leftovers can be frozen for up to three months.
