Ingredients
  

  • 8 oz penne pasta
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup scallops cleaned and patted dry
  • 1/2 cup cherry tomatoes halved
  • 1/2 bell pepper diced
  • 1/4 cup green onions sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili flakes adjust to taste
  • Salt and pepper to taste

Instructions
 

  • Boil salted water in a large pot. Cook the penne pasta until al dente, according to package instructions. Drain and cool under cold water.
  • In a skillet over medium heat, cook the scallops for about 3-4 minutes on each side until golden. Remove and let cool.
  • In a large mixing bowl, combine the cooked pasta, shrimp, scallops, cherry tomatoes, bell pepper, and green onions.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, chili flakes, salt, and pepper.
  • Pour the vinaigrette over the pasta salad and toss until well coated. Refrigerate for at least 30 minutes before serving.

Notes

- Adjust the spice level by adding more or less chili flakes.
