Ingredients
  

  • 8 oz rotini or penne pasta
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup calamari rings
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool.
  • In a skillet over medium heat, cook the calamari rings for 2-3 minutes until opaque. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine the cooked pasta, shrimp, calamari, cherry tomatoes, cucumber, olives, red onion, and parsley.
  • In a separate bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
