Ingredients
- 1 lb chicken breast or thighs
- 1 cup orzo pasta
- 1 onion chopped
- 2 cloves garlic minced
- 3 carrots diced
- 3 celery stalks diced
- 1 tbsp olive oil
- 8 cups chicken stock
- 1 bay leaf
- 1 tsp dried oregano
- 1 tsp fresh thyme
- Salt and pepper to taste

Instructions
- Cook orzo according to package instructions, drain, and set aside.
