Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 4 potatoes diced
  • 1 zucchini chopped
  • 1 cup green beans
  • 1 can diced tomatoes 14 oz
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for 5–7 minutes until vegetables begin to soften.
  • Add garlic and cook for another minute until fragrant.
  • Stir in the potatoes, zucchini, green beans, and diced tomatoes. Cook for 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 30 minutes, or until all vegetables are tender.
  • Season with salt and pepper. Remove the bay leaf and discard.
  • Serve hot, garnished with fresh parsley.
