Ingredients
- 1 whole chicken about 3-4 lbs
- 1 onion diced
- 4 cloves garlic minced
- 3 carrots sliced
- 3 celery stalks sliced
- 1 bay leaf
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 tbsp olive oil
- 8 cups chicken broth
- Salt and pepper to taste
- 1 lemon juiced
- Fresh parsley chopped for garnish
Instructions
- In a large pot, heat olive oil over medium heat and sauté onions, garlic, carrots, and celery until softened, about 5-7 minutes.
- Add the whole chicken to the pot along with bay leaf, rosemary, thyme, and chicken broth. Bring to a boil.
