Ingredients
  

  • 1 whole chicken about 3-4 lbs, cut into pieces
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • In a large pot, combine the chicken pieces and chicken broth. Bring to a boil, then reduce heat to simmer. Cook for about 30 minutes, skimming off any foam that rises to the surface.
  • Once the chicken is cooked, add the carrots, celery, onion, garlic, and bay leaves. Season with salt and pepper. Simmer for an additional 15 minutes until the vegetables are tender.
  • Remove the chicken from the pot and let it cool slightly. Stir in the egg noodles and cook according to package instructions.
  • While the noodles are cooking, shred the chicken meat from the bones. Discard the skin and bones. Return the shredded chicken to the pot.
  • Remove the bay leaves and adjust seasoning if necessary. Ladle the soup into bowls and garnish with fresh parsley.
