- 2 lbs chicken bones carcass, wings, feet, or necks

- 2 carrots roughly chopped
- 2 celery stalks roughly chopped

- 1 bay leaf
- Salt and pepper to taste
- Water enough to cover the bones
Instructions
- Place the chicken bones in a large stockpot or slow cooker. Add enough cold water to cover the bones and bring to a boil. Discard the water after boiling for 5 minutes, and rinse the bones.
- Return the bones to the pot and add the onion, carrots, celery, garlic, bay leaf, and apple cider vinegar. Fill the pot with enough water to cover the bones.
- Bring the mixture to a gentle boil, then reduce the heat and simmer on low for 6–8 hours, occasionally skimming off any foam or impurities.
- After simmering, strain the broth through a fine-mesh strainer or cheesecloth. Discard the solids and reserve the clear broth.
- Season the broth with salt and pepper to taste. Serve it hot as a nourishing soup or use it as a base for other recipes.
Notes
- The broth can be stored in the fridge for up to a week or frozen for future use.
- Adding fresh herbs like thyme or parsley towards the end of the cooking process can enhance the flavor.
