Ingredients
  

  • 12 –14 lbs beef brisket
  • 1/4 cup yellow mustard as a binder
  • 1/4 cup coarse salt
  • 1/4 cup coarse black pepper
  • 1/4 cup apple cider vinegar for spraying

Instructions
 

  • Trim excess fat from the brisket, leaving about 1/4 inch of fat for moisture. Rub the brisket with yellow mustard to help the seasoning stick. Generously season with salt and black pepper on all sides.
  • Preheat the Traeger to 225°F.
  • Place the seasoned brisket on the grill grates with the fat side up. Close the lid and smoke for 6–8 hours until the internal temperature reaches 165°F. Spray the brisket with apple cider vinegar every hour to keep it moist.
  • Wrap the brisket in aluminum foil or butcher paper and return it to the grill. Continue smoking until the internal temperature reaches 200–205°F (about 4 more hours).
  • Remove the brisket from the grill and let it rest, still wrapped, for at least 1 hour. This allows the juices to redistribute.
  • Slice the brisket against the grain and serve with your favorite BBQ sides.
