Ingredients
  

  • 5 –7 lbs pork shoulder Boston butt
  • 2 tablespoons olive oil
  • 1/4 cup BBQ rub store-bought or homemade
  • 1 cup apple cider vinegar for spraying
  • BBQ sauce optional for serving

Instructions
 

  • Rub the pork shoulder with olive oil to help the seasoning stick. Generously apply BBQ rub all over the pork, ensuring an even coating. Let the pork rest at room temperature while preparing the grill.
  • Preheat your Traeger grill to 225°F. This low temperature is key to achieving tender, juicy pulled pork.
  • Place the pork shoulder directly on the grill grates. Close the lid and smoke for 6–8 hours, or until the internal temperature reaches 165°F. During this time, spray the pork with apple cider vinegar every 1–2 hours to keep it moist.
  • Once the pork reaches 165°F, wrap it in aluminum foil or butcher paper. Return it to the grill and cook until the internal temperature reaches 195–205°F (about 2 more hours).
  • Remove the pork shoulder from the grill and let it rest, still wrapped, for at least 30 minutes. After resting, shred the pork with forks or meat claws.
  • Serve the pulled pork with your favorite BBQ sauce, coleslaw, and buns, or enjoy it as a standalone dish.

Notes

- Pulled pork can be refrigerated for up to 4 days or frozen for up to 3 months.
- For a sweeter flavor, add brown sugar to your BBQ rub.
