Ingredients

  • – 1 can chickpeas 15 oz, drained

  • – 2 tbsp olive oil
  • – 2 tbsp lemon juice
  • – 2 cloves garlic minced
  • – ½ tsp ground cumin
  • – Salt to taste
  • – Water as needed for texture
  • – 1 cucumber sliced
  • – 1 red bell pepper sliced
  • – 1 carrot cut into sticks
  • – A handful of cherry tomatoes
  • – Kalamata olives
  • – Warm pita bread or pita chips

Instructions

  • In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt.
  • Blend until smooth, adding water as needed to achieve the desired consistency.
  • Adjust seasoning to taste, adding more lemon or garlic if desired.
  • Spread the hummus in the center of a large serving platter.
  • Arrange the sliced vegetables, olives, and warm pita around the hummus.
  • Drizzle the hummus with olive oil and sprinkle with paprika or fresh herbs for extra flavor.

Notes
