Ingredients
  

  • 1 lb chicken breast or thighs
  • 1 cup orzo pasta
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 carrots diced
  • 3 celery stalks diced
  • 1 tbsp olive oil
  • 8 cups chicken stock
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 tsp fresh thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook orzo according to package instructions, drain, and set aside.
  • Heat olive oil in a large pot and sauté onions, garlic, carrots, and celery until softened.
  • Add the chicken, bay leaf, oregano, thyme, and chicken stock. Bring to a boil, then reduce heat to simmer for 40-50 minutes until chicken is fully cooked.
  • Remove the chicken, shred, and return to the soup. Add cooked orzo and stir to combine.
  • Simmer for an additional 5-10 minutes.
