Ingredients
  

  • 1 whole chicken about 3-4 lbs
  • 1 onion diced
  • 4 cloves garlic minced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 bay leaf
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 1 tbsp olive oil
  • 8 cups chicken broth
  • Salt and pepper to taste
  • 1 lemon juiced
  • Fresh parsley chopped for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat and sauté onions, garlic, carrots, and celery until softened, about 5-7 minutes.
  • Add the whole chicken to the pot along with bay leaf, rosemary, thyme, and chicken broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 1 hour or until the chicken is tender and fully cooked.
  • Remove the chicken from the pot and shred the meat, discarding the bones.
  • Return the shredded chicken to the pot and season with salt, pepper, and lemon juice.
  • Let the soup simmer for another 10 minutes to allow the flavors to meld.
  • Garnish with chopped parsley and serve hot.
