Ingredients
  

  • 12 oz 340g squid ink pasta (store-bought or homemade)
  • 12 large shrimp peeled and deveined
  • 8 sea scallops
  • 4 cloves garlic minced
  • 1/2 cup dry white wine
  • 1 cup cherry tomatoes halved
  • 1/2 cup seafood or chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving
  • Grated Parmesan cheese optional

Instructions
 

  • Bring a large pot of salted water to a boil. Add the squid ink pasta and cook according to the package instructions, usually 8-10 minutes, until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  • While the pasta cooks, heat 1 tablespoon of olive oil in a large sauté pan over medium-high heat. Season the shrimp and scallops with salt and pepper. Add the scallops to the pan, searing them for 2-3 minutes per side, until golden brown. Remove and set aside. Add the shrimp to the same pan and cook for 2-3 minutes, until pink and cooked through. Set aside with the scallops.
  • In the same pan, add the remaining olive oil and reduce heat to medium. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Then add the cherry tomatoes, cooking until softened, about 3-4 minutes.
  • Deglaze the pan with white wine, scraping up any brown bits from the seafood. Allow the wine to simmer and reduce by half, about 2-3 minutes. Add the broth and cook for another 2 minutes to combine flavors. If the sauce seems too thick, you can thin it out with some of the reserved pasta water.
  • Toss the cooked squid ink pasta into the sauce, coating it evenly. Add the seared shrimp and scallops back into the pan, gently mixing to combine all the ingredients. Let everything warm through for 1-2 minutes.
  • Divide the pasta among four plates. Garnish with fresh parsley, a drizzle of olive oil, and a squeeze of lemon juice. Serve with lemon wedges on the side and optional grated Parmesan cheese.
