Equipment

  • Large pot for pasta
  • Skillet for cooking bacon
  • Mixing bowl
  • Tongs
  • Whisk

Ingredients

  • 12 oz protein-enriched pasta
  • 6 strips of turkey bacon
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Boil a large pot of salted water and cook the protein-enriched pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  • In a skillet, heat the olive oil and cook the turkey bacon until crispy. Remove from the skillet and chop into bite-sized pieces.
  • In a bowl, whisk together the eggs, Parmesan cheese, and garlic. Slowly add the reserved pasta water to the mixture, whisking constantly to prevent the eggs from scrambling.
  • Toss the cooked pasta with the turkey bacon and carbonara sauce until evenly coated. Season with salt and pepper.
  • Garnish with extra Parmesan cheese or chopped parsley and serve immediately.

Notes

- For a richer sauce, you can add a splash of heavy cream to the carbonara mixture.
- If you prefer a vegetarian version, substitute turkey bacon with a plant-based alternative.
- Use Pecorino Romano cheese instead of Parmesan for a sharper flavor.
